Banana Granola

This healthy and delicious granola is perfect for breakfast, a snack, or trail mix.
Ingredients
½ cup mashed banana
3 tbsp brown sugar
¼ cup extra virgin olive oil or coconut oil
2 tsp lemon juice
1 tsp vanilla
½ tsp ground cinnamon
¼ tsp ground cardamom
½ tsp kosher salt
1 ⅔ cup oats

⅓ cup original Sasas mix
3 tbsp chia seeds
¼ cup chopped almonds
Directions
Preheat the oven or air fryer to 275°F.
Line a baking sheet with parchment paper.
In a bowl, toss the oats, Sasas mix, chia seeds, and almonds; set aside.
In a saucepan, combine mashed banana, brown sugar, and oil over medium heat until it comes to a boil (about 3 minutes).
Remove from heat and add lemon juice, vanilla, spices, and salt.
Pour the banana mixture over the oat mix, toss to combine, and spread evenly over the baking sheet.
Bake for 15 minutes, then give the granola a toss with a spatula.
Bake for an additional 10-20 minutes until it turns a deep golden brown.
Allow to cool before breaking it up into bite-size pieces and enjoying.
